Climate/conditions
- Mediterranean climate with winter rainfall situated between the cooler, wetter Boland and the harsher, drier Karoo.
- Cool nights enhance the veraison with warmer days for good phenolic ripeness and concentrated flavours.
Winemaking
- Crushed, settled, and racked.
- Inoculated with selected yeast and cold fermented at 12 – 13°C.
- The Chardonnay component was fermented with 1.5 g Hungarian oak bullets.
- Racked and kept on fine lees for 8 months.
- Chardonnay and Pinot Noir only blended right before bottling.
